Ingredients
- 2 cans of chickpeas
- Feta cheese (optional, but makes it taste better).
- Cherry tomatoes, quartered
- Celery, chopped thinly
- Red onion, finely chopped
- Tahini (optional)
- Spinach (optional)
- Cilantro, chopped (optional)
- Olive oil
- Red wine vinegar
- Salt and pepper
Instructions
- Rinse and dry the chickpeas. They don’t need to be cooked, you can ust throw them in straight out of the can.
- Cut up all the rest of the items.
- Mix together in a bowl.
