Chickpea Salad

Ingredients

  • 2 cans of chickpeas
  • Feta cheese (optional, but makes it taste better).
  • Cherry tomatoes, quartered
  • Celery, chopped thinly
  • Red onion, finely chopped
  • Tahini (optional)
  • Spinach (optional)
  • Cilantro, chopped (optional)
  • Olive oil
  • Red wine vinegar
  • Salt and pepper

Instructions

  • Rinse and dry the chickpeas. They don’t need to be cooked, you can ust throw them in straight out of the can.
  • Cut up all the rest of the items.
  • Mix together in a bowl.
