Ingredients
- Two tortillas or one
- Chicken
- Cheese
- Onion
- Red Pepper
- Paprika (optional)
- Oregano (optional)
- Chili powder (optional)
Instructions
- Cook the chicken and make sure it’s chopped up into bite size pieces
- Add the vegetables and cook them when the chicken is almost done, maybe about 2 minutes.
- Pour the mixture onto a tortilla and place it back on the skillet. Add cheese on top of the mixture and then put a tortilla on top of that.
- Cook about 1.5 minutes per side. It helps a lot when you cook the chicken tortilla with a cover on top of the skillet because it keeps a lot of the heat in the skillet.
- Pretty good with guacamole
